Stracciatella is a traditional gelato flavor that is often made improperly by other "artisans". The base flavor is crema, not vanilla. It is a gelato that tastes like fresh milk and cream with no other flavorings. It must be flawlessly made, there is nowhere to hide. We, of course, also make the Belgian dark chocolate "stracciatella," from scratch, in house, fresh. When I extract the crema gelato, I drizzle the liquid stracciatella sauce on the gelato where it quickly freezes hard. Stracciatella means "torn pieces" from the Italian verb stracciare "to tear". The little pieces of chocolate look as if they've been torn. It's a classic that we've elevated with first class ingredients and top technique.
